If my system has multiple network adapters e.g. ethernet and wlan which MAC ID should be used for licensing?

It doesn't matter so much, as long as it's always available. So don't pick any "virtual host" or VPN host, and ideally not the wireless either because in case you go to airplane mode, the wireless adapter is disabled and then you can't use the license. So, our recommendation is generally the wired interface since you rarely will disable it.

That depends on what you mean by "turned off". If the adapter is "disabled" - meaning it is physically turned off (or if you actually right-click it and choose "Disable", then this host ID will not be active. If it's "connected" or not is not important.
